Chef Mikael Viljanen

Mickael Viljanen is a celebrity in the foodie universe. The Chef-Patron of the multi-award-winning Chapter One restaurant in Dublin, and one of only four chefs in Ireland to be awarded two Michelin stars, is celebrated for his sublime craft, technical precision and masterful manipulation of flavours.

Working in kitchens since he was 14, Mickael moved to Ireland in 2000 from Finland, where he grew up via France and the United Kingdom. He first worked with Paul Flynn at The Tannery in Dunngarvan, renowned for its modern Irish menu. Then, after a five-year stint as head chef at Gregans Castle in Count Clare, he moved to open The Greenhouse in 2012.

Arguably one of the best restaurants in Dublin, Mickael’s sophisticated cooking with stimulating flavour combinations and a nod to traditional Finnish dishes put seasonal Irish produce centre stage. It also won him “Restaurant of the Year” from Ireland’s leading independent hospitality guide, the Georgina Campbell Guide, in the first year of operation. This was followed by Food & Wine magazine’s ‘Chef of The Year’ twice – most recently in 2019, the same year he was crowned Georgina Campbell Guide “Chef of the Year”. The restaurant also received a 26th place ranking on Opinionated About Dining Top 100 for classical dining in Europe. But by far, his biggest accolade has been the Michelin stars: one star since 2015 and two stars in 2019. In between, he has also appeared on Masterchef Ireland in 2012 as a guest judge and was one of the judges for the San Pellegrino World Young Chef final 2018 in London.

With his name already in the lights, Mickael decided it was time to move on and work for himself. And early this year, he took on the role of Chef-Patron at the iconic Chapter One that has been awarded a Michelin star since 2007, among many other awards. Here too, his cooking focuses on prime ingredients and uses classic French techniques to create dishes that offer bold and sometimes quite daring flavour combinations.
